β-胡萝卜素包埋与递送技术的研究进展Advances in β-carotene Encapsulation and Delivery Technology

摘要(Abstract):
β-胡萝卜素作为转化率最高的维生素A前体,是一种性能优良的天然脂溶性营养素和色素,具有极高的营养价值以及辅助抗氧化、抗癌作用[1]。但是其物化性质不稳定,对光、热、氧敏感[2],生物利用率低,极大地限制了它在食品工业领域的应用。近年来,为改善其相关性能,拓宽β-胡萝卜素的应用范围,国内外学者开展了一系列关于β-胡萝卜素运载与稳定技术的研究。此文综述了近几年来关于不同原料和工艺构建运载体系负载β-胡萝卜素的研究进展,为制备稳定高效的β-胡萝卜素包埋运载体系、提高其生物利用率提供一定的理论参考。
